My spice shelf fills with new spices and I'm constantly searching for new produce for my tastebuds to try. There is so much adventure and enjoyment - and a lot of mistakes and disaster, but that just makes you want to try more.

Im best at italian food and red sauce which alot of people over cook over season and kill.I like making pizza because I love to eat it
for some reason I never ever made rissotto and polenta but this
year I started and it was great off the bat
and I started with a traditional recipe
now I can improvise it my way
made a rocking mushroom and green onion rissotto
last night with a lot of white wine and homemade broth I had in the freezer
Homemade broth whatever the kind you make is the secret to the BEST cooking
I always found that to be really true

Since I have low budget, plus I live in Thailand, things like cheese and roast meats are expensive here. Contrast with what cheap asian ingredient i can get my hands on here and what you can buy from your market, mine is exotic to you and yours are desireable to me.
So i do with what i have around me and most staple meals i have is Jasmine rice with something...

i like to cook Korean bugulgi (bbq). My husband's step father was Korean and taught him to make it a little different than most recipies you'll find, but I think its way better than every one elses'. I've never actually measured any of the ingrediants, so I'm guessing the measurements here. Best - taste it and see if its good.
1/2 pound of meat serves at least 2-4 people. This is a really filling meal, despite not having very many ingredients.
*Ingredients: 1 cup (uncooked)Rice, jar of Kimchee, 1/2 pound Thinly sliced beef (or pork), sesame oil, fish sauce, oyster sauce, soy sauce, sugar, corn startch, minced garlic (or powder), water, toasted sesame seeds and sushi nori.
1. Cook Rice
2. Nori: Toast sushi nori in a little (1tsp appx, just enough to toast, so its not soggy) hot sesame oil, one sheet at a time on both sides, turn quickly so it doesnt burn (i use my fingers but its easy to pick up with a fork or chopsticks) season with salt. Break into small 2 inch or so squares.
3. Meat: Cook meat in pan on med/high heat until browned, season with garlic.
4. Sauce: Take meat out of pan, but keep heat on. Pour about 1/3 cup soy sauce in and dilute with maybe 1/4 water. Add maybe 1/4 c sugar (taste) till the sauce is sweet, not bitter. Add a tea-spoon of fish sauce and oyster sauce. About a tablespoon of toasted sesame seeds. Cook down till sugar is dissolved, should taste sweet. Add meat, simmer for about 5 minutes so flavors mix.
5. Mix a tea-spoon of cornstartch with a tiny bit of (COLD) water, mix it with your finger in a bowl, till its saucy and not lumpy. Tip the pan a little, to get the sauce on the side, and pour the cornstartch into the liquid. The sauce will get thick quickly, so stir it constantly.
Meal is done when sauce is thick enough so its not drippy. Depends on how you like your sauce, you can cook it longer so its thicker.
6. Serve: Get a peice of Nori, put on a bit of rice in the middle, add some meat mixture, and a peice of kimchee. Eat it in one big gulp!

I'm far from an expert cook, I don't know how to do much in the kitchen, but I do like to cook an Essex variation of chilli - lots of chilli powder, sweet pointed peppers, tomato and I use baked beans instead of kidney beans (which I don't 'really' like). It's a variation of the recipe my Mum used when I was a boy. Cooked well and long to allow all the flavours to mingle and the sauce to thicken up and go really red/orange colour it's a real comfort food for me. Lovely!

I also like baking bread (only in a bread-maker though) and making muffins. Am thinking of making some banana muffins today...

I'm experimenting with home-made pizza since my milk allergy means regular pizza is off the menu. Made this sweet pointed pepper and pancetta one last night:

vegan pizza I make my own dough I use canned tomatoes but do not cooked them there already cooked from canning I mince fresh garlic and basil let it marinate while the dough rises any veggies you want should be partially pre cooked to avoid a wet soggy pizza since veggies have alot of water in them
I use a mix of vegan cheeses and drizzel my BEST olive oil and a dash of greek orgegano I bake on a screen then when stiff I finsih if off on the floor of my oven where I have a pizza stone sometimes I do slide it directly on the stone
the oven should be put on the highest heat for at least an hour no less than 30 minutes
when I put the pizza in I lower it
if the top dosnt cook as fast as the crust I run it under broiler spinning it which Im sure is a lovely sight to behold me on the floor spinning a pizza under the flame, spinning cooks it evenly and prevents burning

cook stuffed pastas in a wide skillet and scoop them out with a slotted spoon drain of water bang the spoon gently and put on platter with some sauce already on it and layer the delicate pasta to pout it out into a colander and boil it in a pot can be tricky this way they all stay in tack I turn them over to make sure both sides cook even though I have a high sided skillet bringto a boil but turn down and simmer in water after you add them so they dont fall apart

i love to cook things I have never cooked before. I like trying and using methods that I have not used. When I try something for the first time and it works, that makes me excited about cooking. If I try and fail the first time I want nothing more than to find my mistake and fix it until I love it. My most recent successes was a citrus cheesecake with a ginger snap cookie crust.

Mmmm...I love to cook just about everything. Really. But last night, for the very first time, I made spring rolls and they were lovely.
