My friend is Mexican, but travelled on a US passport w/ no visa and got one exit stamp, I believe. I have seen both entry and exit stamps. If you get them or not may depend on if you leave through airport or land border crossing. Some countries stamp on exit, but only at land borders and not at airports, and the only exit stamps for mexico I've seen have been land crossings, not airports. Still, not totally sure though.
