Recipe (serves 6-8): Peel, remove core and slice 1kg of apples. Melt 50g unsalted butter, fry 50g of crumbles until golden, and transfer to a bowl. Add the apples, 1/2tbsp cinnamon, 50g sugar, 50g sultana raisins, 50g chopped hazel nuts, and 150g chopped dark chocolate. Melt 75g unsalted butter, glaze a thin sheet of puff pastry, and repeat with two more sheets. Place half of the apple mix on the pastry, roll and place on a tray with the joint down. Create another roll, and glaze with butter. Bake at 190 degrees centigrade for 30 minutes. Serve with icing sugar.
