The forgotton reality

No one ever thinks about the shocking abrubt end to the life of the animal that they are eating when they sit down to eat meat. I am one of those.
So when i recently sought some pigs head for our 2nd chef to experiment with, even i didn't know what i was in for. The eyes!!, the shocking sight of cold, lifeless eyes sent a shiver down my spine.
When you can sometimes be breaking-down 10 pork legs for a braise, you don't think about the life gone by of these 5 pigs that these cuts have come from. While I'm a devoted carnivore and supporter of ethical produce, this experience has left me with a reinforced drive to make sure that each piece of produce i use is treated with dignity and respect in creating something so wonderful for the people i cook for, so in that sacrifice of life, it isn't one in waste.
Nb. I could of quite easily had a lovely photo of terrine, though i preferred this "behind the scenes look".The above head was soaked in brine for a week, simmered in a bullion for 5 hours and turned into a brawn that was enjoyed by many.........
though I still had trouble eating it

oh, this reminds me of a story from my
travels of a pig's head that ended an
argument between a fruitarian and a butcher.
Must remember to write that down.

Next time take a trip to the abattoir... now
that's a fun experience. Growing up on a
farm and killing our own meat I guess I got
used to this fact a long time ago... My
personal philosophy though, is that if you
can't bring yourself to kill something, or to
bear the fact that an animal died for your
meal...then perhaps you shouldn't be eating
meat in the first place... Nothing shits me
more than a person who gets all grossed out
at a dead animal and then starts chomping
into a steak...
Not that that's you obviously... but you get
my drift...

thanks for posting the morbid--yet totally
natural--image and your accompanying text.
insightful, and so on the money. we forget so
easily about our food sources and what it
takes to provide these delicacies to the
consumer. especially in a city like nyc,
there is such great removal from life, death,
etc. as such. not a 'pretty picture' but
poetic nonetheless.

even Gordon Ramsey couldn't bear to watch
pigs being slaughtered.
i guess i'm used to watching my grandma deal
with chickens since i was a kid!
btw, i was quite surprised to see pig heads for sale in Box Hill Central, albeit more
cleaned-up than this :)
