valentine's day soup

red pepper lentil soup

2 tbsp oil
1 diced onion
2 minced cloves garlic
4 diced carrots
1 diced red pepper

1 1/2 c red lentils

2-3 tsp cumin
6 cups stock

Pretty basic deal. Saute veggies in oil til soft & tasty. Add to stock with lentils and cumin. Cook down for 60-90 minutes Presto. Easy and delicious. You can add wild rice and other grains if you want. This soup is brown and looks totally uninteresting but is really good. Also, it's vegan if you make it with veggie stock.
