Birthday Wishes to My Cousin RH!

My cousin lives in HK, so this is my attempt to send virtual sweet wishes for a sweeter birthday! My cousin recently came into the cooking/baking hobby, so my big wish to her is a year of great food from the RH kitchen. Can't wait to see the continued progress with that!! Hopefully one day we'll both get to play around in the same kitchen and eat the fruits of our labour together. :)

Using some of the remaining custard from Pichet Ong's Ginger Banana Cream Pie, I placed crushed Scottish Shortbread pieces from some Fortnum & Mason cookies I brought back from London as the base of some custard cups before layering it with ginger infused custard, fresh sliced bananas, and bits of candied ginger. This was repeated once more, then topped with a dollop of unsweetened whipped cream, and a singe square of 70% Lindt dark chocolate.
