The lemon-juice and sweet-onion are interesting and sound very good!

I used almonds, basil and spinach in mine the other night (first time w/ almonds & spinach) and I was very pleased.

I LOVE pine-nuts but it seems that using walnuts and especially almonds leads to a less naturally oily pesto, which I like. And you can always add olive oil to change that.
