Thai Spring Rolls

Rice noodle and veggies in rice paper?

 

Served with a smokey plum sauce...recipe to follow.

Here is the recipe:

1/2 cup canned crushed pineapple, drained

1/4 cup pineapple juice

1/3 cup mashed plums

1/4 cup brown sugar, lightly packed

3 tablespoons cider vinegar

1 teaspoon finely chopped garlic

1 teaspoon chipotle pepper

 

In a blender combine pineapple, juice, plums, brown sugar, vinegar, and garlic and process until smooth. Transfer to a small saucepan, and add chile peppers. Bring mixture to a boil, reduce the heat, and simmer for 5 minutes, stirring constantly. Remove from heat. Eat. Makes enough to refrigerate a use up to a week (1 cup).
