cranberry cupcakes.

(makes 10 cupcakes)

5 1/2 tbsp butter, softened

1/2 cup superfine sugar

1 large egg

2 tbsp milk

3/4 cup self-rising flour

1 tsp baking powder

3/4 cup frozen cranberries


1. Preheat the oven to 350 deg. F/180 deg. C. Put paper baking cases in a muffin pan.


2. Beat together butter and sugar in a bowl until light and fluffy. Gradually beat in egg, then stir in milk. Sift in the flour and baking powder, fold into mixture using a spoon. Gently fold in the frozen cranberries. Spoon the batter into the paper cases.


3. Bake the cupcakes in the preheated oven for 15-20 minutes, or until well risen and golden brown. Transfer to a wire rack and let cool.
