Guac and Salmon on a lettuce-chip
I have seriously cut-back on processed foods and in particular corn. Corn is just not very impressive when it comes to heath benefits. I'd much prefer to indulge in things like chocolate and tequlia when I'm wandering the boarders of my paleo diet. So in place of the trusty corn chip I typically go for a good romain lettuce and focus on the bottom third of the leaf in particular. It's crisp, strong enough to handle a good load of food and a good fresh lettuce will ad a nice bit of flavor as you crunch into it.
