It was World Nutella Day yesterday and of course some Nutella cookies needed to be baked! Have a sweet weekend dear friends, thank you for your visit.

Peanut butter cookies swirled with Nutella. I love peanut butter and Nutella together (although care should be taken when eating plain pb and Nutella at the same time so as not to permanently "glue" your mouth closed), so I combined the two into a cookie.

 

Ingredients

1/2 cup unsalted butter, softened

3/4 cup peanut butter (I used crunchy, but you can use smooth too)

1/2 cup white sugar

1/2 cup packed brown sugar

1 egg

1/2 teaspoon vanilla extract

3/4 teaspoon baking soda

1/4 teaspoon salt

1 3/4 cups all-purpose flour

Approx. 1/4 cup Nutella (optional)

 

Preparation

1. Combine margarine, peanut butter, sugars, egg, and vanilla. Blend together very well.

2. Add flour, baking soda and salt with mixer. If using Nutella, just drizzle it on top of the dough (use more or less to suit your taste) then swirl it through the dough with a butter knife. Chill dough 15 minutes in the refrigerator. Roll into balls by hand.

3. Place on greased cookie sheet. Using a fork, press down the balls and create a criss cross pattern. Bake in a preheated 350 degrees F (175 degrees C) oven until edges are very lightly browned (about 7 to 10 minutes). Don't overbake.

 

I got about 40 cookies out of this and they are so yummy!

Found a recipe at this webpage, it's pretty simple:

Ingredients:

8 tbsp butter (1 stick)

½ cup cocoa

¾ cup sugar

¾ cup Nutella

2 oz. chocolate (dark works well)-optional

2 eggs

½ cup flour

½ tsp salt

 

Preheat the oven to 350. Grease an 8×8 inch pan.

 

Melt the butter in a saucepan over low heat, then add the cocoa and whisk together. When it’s smooth, add the sugar, Nutella and optional chocolate. Whisk in the eggs. Sift the flour and salt together in a separate bowl. Add the flour mixture to the wet ingredients and fold together. Pour into the greased pan. Bake for 20 to 25 minutes. Cool and slice.

 

I love the flavor, but I might have added a bit too much Nutella-- they were QUITE fudgy. Maybe next time I'll up the flour ratio just a bit.

 

Actually, next time I might try Nutella cookies or gelato!

So this morning as I was searching through the pantry, trying to decide just what I could make for my treat of the week I noticed a large container of Nutella.

 

Something I purchased a while ago for the Nutella and Ferrero Rocher Brownies and had just sort of forgotten about.

 

Having my key ingredient picked out, I went about finding a recipe that suited what I had in the house already.

 

I found one, on the baking blog I used last week and figured why not. Last week was a success afterall.

 

Recipe for those interested:

 

Ingredients:

1/2 cup of butter, melted

1 egg

3/4 cup of packed brown sugar

1/4 cup of white sugar

2 tsp of pure vanilla extract

1 1/2 cup of all purpose flour

1/2 tsp of baking soda

1/2- 1 tsp of sea salt (depending on your taste buds)

1/2 - 1 cup of nutella (again, depending on your taste buds)

1/2 cup of condensed milk

 

Directions:

1. Preheat the oven to 350F, and grease an 8x8 pan (or cheat and use parchment paper)

2. Cream together the melted butter, both sugars, and the vanilla. Stir in the egg.

3. Gradually mix in the flour, baking soda and salt until just incorporated.

4. Take about 3/4 of a cup of the dough and set aside. Press the remaining dough into the bottom of the pan.

5. Drop spoonfuls of Nutella evenly over the base layer and pour the condensed milk on top

6. Crumble the dough you had set aside over the top.

7. Bake for 30 minutes and cool before cutting.

Had to stay in today to take delivery of a new piece of furniture; it came late morning so I had the afternoon free to do some baking. I found this very simple cookie recipe online and thought I'd try it. Here's the result.

 

3 Ingredient Nutella Cookies (makes 14-16)

 

150g plain flour

240g Nutella

1 large egg, beaten

 

Heat oven to 180 degrees celsius and line a baking sheet with baking parchment.

Add all ingredients together in a large bowl and mix until well combined. The mixture should form a thick dough but should be moist enough to form into balls.

Roll into evenly sized balls, put onto baking sheet and flatten slightly with a fork or the bottom of a glass (I used a fork).

Bake 8-10 mins until cooked around edges and slightly soft in the middle.

Remove from oven and let them sit for 5-10 mins before removing from baking sheet and cooling on a cooling rack.

I know I'm early... but I couldn't wait to post this one!

Today, Sunday, I made cookies for my housemates. They are peanut butter & Nutella cookies. If you ask nicely, I'll give you the recipe (they are dead easy). I thought I'd have a shot with them before they are all gone...

One thing you might not know about me yet, is I LOOOOVE cooking. I love it as much as I love photography. Or nearly. :D

 

I also have a very strong feeling of hatred for Mondays. But I have to admit, Bench Mondays have made it a little bit easier... Thank you Flickr and thank you my Flickr friends.

July 19th.

Yesterday Graham and I went to his friend Tyler's house with his girlfriend Sara.

His mom made us dinner and we got Dairy Queen and it was a lot of fun.

After we went to Horseshoe Lake and it was some of the happiest few hours of my life.

Tomorrow I'm going to see Batman and Lainey leaves for Kiawah on Saturday. I leave the 28th.

Today I made Nutella cookies which weren't too bad. I've never made them. An experiment.

Not exactly my idea of a photo but I've never done a purposeful square crop before.

I guess it's another experiment today. I'm trying new things. Trying to start fresh I guess.

I'm on season 5 on Grey's Anatomy and I can't wait for Owen and Cristina to blossom okay.
